Tomato season is finally upon us! Head over to the farmers market and get some of those wonderful tomatoes and try this super easy recipe, it’s always a crowd pleaser!
Mixed tomatoes (preferably various colours and sizes - the more the variety the better) , cut into wedges or halves
2 Tbsp. extra-virgin olive oil
2 Tbsp. oregano leaves (from about 4 sprigs)
2 Tbsp. fresh basil leaves
2 tsp. kosher salt
1 tsp. freshly ground black pepper
Directions:
- Toss tomatoes, oil, oregano, salt, and pepper in a medium bowl.
- Let sit, tossing occasionally, until juicy and deeply flavored, at least 30 minutes and up to 1 hour.
- If you are feeling adventurous grab some “stinky cheese” (that’s what our kids feta) or any type of cheese (a grilled halloumi would be a nice addition) and throw it in the mix when you are ready to serve.
- Get some day old crusty bread to dip in the oil while you enjoy your salad.
