Lazy Cabbage Rolls

I’m all about working smart and not hard when it comes to our dinner menu at home. This is one of my favourite easy, go-to recipes that the kids love!

In a slow cooker or pressure cooker (just less cooking time) combine in layers

  • At least half a chopped green cabbage (more or less to taste)

  • Rinsed rice (brown or white, your choice)

  • Cooked ground protein (I’ve done meat and pork combinations, turkey and lamb combinations - usually 2-3 packs of meat, I’ve never tried ground substitute, I’m sure it would work)

  • Chopped onion, if desired

  • Salt, Pepper and garlic powder to taste

Add 1 can diced tomatoes, including the juice (sometimes I use the garlic or Italian flavoured ones) on top

Fill the tomato can with about 1/2 can of water and pour over top of ingredients

If using slow cooker, cooker on low for 6-7 hours.

If using pressure cooker, 20-30 minutes should probably get that cabbage nice and soft.

Stir before serving.

This is a kids favourite at our house. Adults usually add some sriracha sauce to spice it up.
