Lemon almond oat cookies

My son loves anything with lemon. Here’s an easy recipe for a semi-healthy cookie (can we call cookies healthy?)

Ingredients

  • 1 ½ cups rolled oats (gluten-free if needed)

  • ¾ cup almond flour

  • ¼ cup honey or maple syrup

  • 1 egg (or flax egg: 1 tbsp flaxseed + 2.5 tbsp water)

  • ¼ cup coconut oil, melted

  • 1 tsp vanilla extract

  • Zest of 1 lemon

  • 2 tbsp fresh lemon juice

  • ½ tsp baking soda

  • ½ tsp cinnamon

  • ¼ tsp sea salt

  • ⅓ cup sliced almonds

  • Optional: ¼ cup dried cranberries or white chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a bowl, whisk together honey, egg, coconut oil, vanilla, lemon zest, and lemon juice.

  3. In a separate bowl, mix oats, almond flour, baking soda, cinnamon, and salt.

  4. Combine wet and dry ingredients, then fold in almonds and optional add-ins.

  5. Scoop tablespoon-sized amounts onto the baking sheet, flatten slightly.

  6. Bake for 10-12 minutes, until golden brown.

  7. Cool on a wire rack and enjoy!
