My son loves anything with lemon. Here’s an easy recipe for a semi-healthy cookie (can we call cookies healthy?)
Ingredients
1 ½ cups rolled oats (gluten-free if needed)
¾ cup almond flour
¼ cup honey or maple syrup
1 egg (or flax egg: 1 tbsp flaxseed + 2.5 tbsp water)
¼ cup coconut oil, melted
1 tsp vanilla extract
Zest of 1 lemon
2 tbsp fresh lemon juice
½ tsp baking soda
½ tsp cinnamon
¼ tsp sea salt
⅓ cup sliced almonds
Optional: ¼ cup dried cranberries or white chocolate chips
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, whisk together honey, egg, coconut oil, vanilla, lemon zest, and lemon juice.
In a separate bowl, mix oats, almond flour, baking soda, cinnamon, and salt.
Combine wet and dry ingredients, then fold in almonds and optional add-ins.
Scoop tablespoon-sized amounts onto the baking sheet, flatten slightly.
Bake for 10-12 minutes, until golden brown.
Cool on a wire rack and enjoy!
